Spicy Flavourful wet fry Matumbo (tripe) recipe
Matumbo is a Kenyan delicacy commonly served with hot ugali. Here is how you can achieve a flavourful dish of wet fry matumbo.
Ingredients
½ kg washed and diced matumbo
2 large tomatoes blended
1 large onion
Coriander leaves and stalks
1tbsp paprika
2 tbsp garlic and ginger paste
1 tbsp curry powder
1 beef cube
½ tsp black pepper
Vegetable oil
Salt to taste
Procedure
Boil the matumbo with salt, two tablespoons of garlic and ginger paste until tender and put them aside
Place a pan on medium heat and add some oil to it
Fry the sliced onions until soft and translucent
Add the paprika, curry powder, black pepper, and then the remaining ginger and garlic paste.
Stir and let them simmer for the spices to cook
Add the coriander stalks and blended tomatoes and let them cook a minute
Add the pre-boiled matumbo, stir and let it cook for 5 minutes on low heat.
Mix the beef cube in a bit of water and add it to the pan; cover and let it simmer for another 5 minutes
Garnish the dish with coriander leaves
Serve your matumbo and a side of veggies with hot ugali or any preferred dish
