You'll need around 30 minutes to clean and prepare 50 snails for cooking, which should serve eight to twelve people depending on the dish. To get started, all you'll need is a large skillet or pan, a sharp knife, and 50 snails, then follow these simple steps:

1. Remove the membrane covering the aperture in the shell using a sharp knife.


2. Fill a big pot or pan halfway with fresh water and place the snails in it.


3. Remove any snails that float to the surface.

4. Rub two to three snails together with your fingers at the same time. Set them aside and move on to the next two or three, working your way through the entire batch.

5. After cleaning the snails this way once, discard the water. Rep the process with fresh clean water in the pot.
