How to Prepare Juicy Chicken Mushroom Bites

These pan-seared mushroom chicken bites prepared in aromatic herbs and spices make a delicious low-carb dinner dish.

How to perfectly brown the chicken cubes

The chicken can be fried in a heated pan for 5–6 minutes, or until it is just cooked through and browned all over, by cutting it into 1-inch bite-size cubes. Avoid overcrowding your pan; if it's small, cook in batches to guarantee equal frying. Make sure the chicken cubes are properly browned and seared. After the other ingredients, including the mushrooms, have finished cooking, the golden chicken bites are added back to the pan to finish warming through.

What you need to prepare juicy bites

Chicken thighs: boneless, skinless chicken thighs cut into cubes simplify the cooking process.

Mushrooms: use any type you like white or brown mushrooms can work with this recipe.

Garlic: Garlic is a key ingredient in this recipe. Use freshly minced garlic as it adds more flavor and fragrance to the meals.

Seasoning: Use seasoning and herbs of choice, this recipe involves paprika, Italian seasoning, garlic powder, salt, and black pepper. Feel free to substitute any of the seasonings in the recipe.

Vegetables: Add other veggies you might want such as broccoli, zucchini, cauliflower, carrots, onions, peas, and green beans.

Peppers: use green bell peppers and or red bell peppers.

Coriander: garnish with fresh thinly chopped coriander leaves after serving.

Ingredients

500g boneless chicken thighs

250g sliced brown mushrooms

5 cloves minced garlic

1 green bell pepper capsicum

A bunch of spring onions

3 tablespoons vegetable oil

2 teaspoons mixed herbs/ Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/4 teaspoon cracked black pepper

Salt to taste

2 tablespoons freshly chopped coriander

Procedure

Heat a tablespoon of oil in a large pan on medium-high heat and add the chicken pieces once the oil gets hot.

Season the chicken with salt, pepper, mixed herbs/ Italian seasoning, garlic powder, onion powder, and paprika.

Mix well and sear chicken all over until browned and cooked through for about 6 minutes.

Transfer cooked chicken to a plate; set aside and keep warm.

Heat another tablespoon of oil in the same pan and add the halved mushrooms.

Cook while stirring for about three minutes until the mushrooms brown and soft.

Add the remaining vegetable oil to the pan and sauté spring onions and capsicum until just soft and fragrant.

Add the garlic and sauté for a minute until fragrant.

Add the cubed chicken back into the pan and mix through all of the ingredients to evenly coat in the pan juices.

Cook the vegetables and chicken together until they are both tender.

Taste the food and season with salt and pepper, if desired.

Serve warm with a preferred dish and enjoy

Tips

In order to accommodate the bulk of the extra vegetables, up the seasoning and add some chicken stock.

Ensure the mushrooms you use are well-cleaned. You can use the dry method of brushing them or wiping them with a cloth. If you choose to wash them with water, allow them to dry completely since they absorb water.

You can use cremini mushrooms as they are simply the brown version of the common white cultivated mushroom. You can also use Portobello mushroom but their flavor will be stronger than the cremini mushroom.
