5 eggs, whisked

2 tsp cooking oil

1 large onion diced

2 ripe tomatoes, diced

1 small bell pepper, cubed

3 cloves garlic

1 tablespoon curry powder

1 bunch coriander, thinly chopped

Salt to taste

Procedure

Crack the eggs and place them in a medium bowl.

Season with salt and/or pepper and sprinkle with (optional) freshly chopped coriander.
