It is wonderful for a lazy Sunday breakfast or brunch because it is so simple but so satisfying.

Why orange and poppy seed flavored pancakes

With poppy seeds, these pancakes have a sweet, pungent citrus flavor. They are soft, moist, delicate sponge with poppy seed bits. Poppy seeds have a nutty, somewhat fruity flavor with an earthy flavor. They also have a slight orange flavor from the orange zest, but you may boost it with orange essence. The orange syrup adds a pop of flavor and a pleasant citrus flavor to the pancakes.

Tips for making orange poppy seed pancakes

To make the perfect fluffy orange poppy seed pancakes, ensure the batter is thick and creamy.

First, preheat your nonstick pan over medium heat. Reduce the heat to a low-medium setting after it's heated. Then, for about two minutes, lightly coat the pan with a tiny amount of butter or vegetable oil.

Pour your batter into a 1/4 cup measuring cup to produce excellent, equally proportioned pancakes. Start pouring from the center and work your way out in a circular manner until the batter forms a rustic round shape.

Slide a spatula underneath the pancake when flipping it to get that perfect flip without uneven pancake edges. This will also enable you to achieve crispy and golden edges.

Allow the pancakes to finish cooking without rushing them on high heat or flipping them too soon. Allow the underside to cook to a beautiful golden brown color, and flip when bubbles appear on the top and around the surface to allow the other side to cook.

Adding an extra pinch of baking soda and a squeeze of lemon juice makes the pancakes extra fluffy. This is because baking soda activates best when combined with an acidic component, such as lemon juice. If you cannot get lemon juice, use white vinegar instead, or buttermilk instead of milk.

If you do not like poppy seeds, you can add chocolate chips, raisins, sultanas, currants or blueberries

Ingredients

Pancakes:

3/4 cup whole meal self-raising flour

3/4 cup white plain or all-purpose

1 egg

1/4 cup raw sugar or natural sweetener of choice

1 teaspoon baking powder (use 3 teaspoons baking powder if using all-purpose flour

1/4 cup low fat/light butter, melted

1 cup unsweetened almond milk or any milk

1/4 cup freshly squeezed orange juice

1 tablespoon orange zest

1 tablespoon poppy seeds

Orange syrup:

1/2 cup maple syrup

1 tablespoon orange zest

Preparation

Orange Syrup: To make the syrup, combine maple syrup and zest in a jug, cup, or bowl, and set aside to enable the flavors of the orange to seep into the syrup.

In a medium-sized mixing bowl, combine the flour/s, sweetener/sugar, and baking powder.

In the center, make a well and add the egg, butter, milk, and orange juice.

To mix, stir in the flour. Fold in the poppy seeds and zest, but don't overmix the batter.

Heat a nonstick pan or griddle over low-medium heat and lightly grease the pan with a little butter.

Pour 1/4 cup of batter onto the pan and carefully spread out with a spoon into a round shape.

Flip with a spatula when the bottom is golden and bubbles develop on the surface, and cook until golden.

Continue with the remaining batter until all of the pancakes have been cooked.

Serve with orange syrup, frozen yoghurt, and ice cream if desired.
