How To Bake Soft Cinnamon And Lemon Cookies

Ingredients

3 cups all-purpose flour

1¼ cup margarine

1 tsp lemon zest

1½ cup white granulated sugar

2 large eggs

1tbsp pure vanilla extract

2 tbsp cinnamon

½ tsp baking powder

1 tsp salt

Procedure

Preheat the oven to 175°C.

In a large mixing bowl, beat butter and sugar until light and fluffy while scraping the sides of the bowl.

Beat in eggs and vanilla extract for a further 2 minutes until well incorporated.

Fold in flour, baking powder, cinnamon, lemon zest and salt until just combined.

Cover dough and refrigerate for about 30 minutes

Roll cookie dough into balls

Arrange cookies at least 3-inches apart on prepared baking sheets. Sprinkle with a little extra cinnamon to ensure cookies are completely covered.

Bake for 10-11 minutes or until edges are golden.

Let cool for about 10-15 minutes on the baking sheet before transferring to a wire rack to cool completely.
